7 Days of Christmas Cookies – Molasses Ginger Cookies

In the interest of adding some variety to the lineup, I’ve started adding these molasses ginger cookies. I don’t usually like gingerbread-y type stuff, but these are nice and chewy, and add a good, hearty texture to the collection. My mom substitutes sprouted spelt flour in an attempt to be a little healthier, and to be honest, you really can’t taste the difference.

Molasses Ginger Cookies

2 eggs
2 cups sugar
1 1/3 cups butter
3/4 cups molasses
5 cups flour
4 teaspoons baking soda
4 teaspoons ginger
1 tablespoon cinammon

Preheat oven to 350˚.

In a mixing bowl, combine eggs, sugar, butter and molasses, and beat until smooth. Add flour, baking soda, ginger and cinnamon, and mix thoroughly until batter is fairly stiff and smooth.

Scoop dough onto cookie sheets, and bake for 12-15 minutes until the edges of the cookies are firm.
