7 Days of Christmas Cookies – Peanut Butter Kisses

This is the year that I finally learned how to make these right. The secret is to not overbake them – the original recipe says to bake at 375 for 10-15 minutes, but what my mom never told me was that you actually should put them in at 350 for 8 minutes. This keeps these standards moist and delicious, not try and crumbly. Last year was a total disappointment, because we baked them to the point of being so dry they were almost inedible, but this year they’re AWESOME.

Peanut Butter Kisses

1 cup butter
2 eggs
1 cup brown sugar
3/4 cup white sugar
1 cup peanut butter
2 1/2 cups flour
1 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1 package Hershey kisses

Cream shortening, peanut butter, vanilla and eggs. Beat well. Add sugar and remaining dry ingredients. Roll into small balls, roll in sugar, and place on baking sheet, pressing down slightly. Bake at 350˚ for 8 minutes, or until just done. While baking, unwrap kisses. When you’ve taken the cookies out of the oven, press a kiss into each cookie. Try to resist stuffing into your face when the chocolate is all melty, as you will burn your mouth.
