7 Days of Christmas Cookies – Spritz Cookies

I don’t know if you’ve figured out yet that I’m not a huge fan of dry cookies, but what I think is great about these spritz cookies is that they are not dry! Usually it’s kind of a struggle to actually get the cookies to come out of the…spritzer? but these are pretty easy to stamp out, and it’s a pretty big cookie payoff for not a ton of effort. The dough is super yummy, too.

Quick Mix Spritz Cookies

2 1/4 cups sifted flour
3/4 cup sugar
1/2 tsp. salt
1/2 tsp. baking powder
1 cup butter
1 egg
1 tsp. vanilla

Preheat oven to 375˚

Sift the flour, sugar, salt and baking powder together. With pastry blender, cut the butter into the dry ingredients until the mixture is full of very fine lumps. It will resemble pie crust or biscuit mix, although not as coarse. Measure the egg in a measuring cup. A large egg will measure 1/4 cup. If not, add water to make 1/4 cup. Add the egg and vanilla, and beat the mixture. DO NOT overbeat. Fill the cookie press and distribute cookies on ungreased cookie sheet. Bake  for 10-12 minutes, or until just brown on the outside.  Makes 5-6 dozen.
