So I don’t know about you, but I have been digging salads lately. I’ve been craving fresh flavors, and vegetables, and it doesn’t hurt that you feel super healthy eating a yummy salad. This shrimp salad used to have pasta, but I substituted chopped zucchini, and that was a great idea. Over time the zucchini soaks up the flavors and adds a nice crunch.

2 chopped zucchinis
1 1/2 cups chopped cooked shrimp
1/2 cup frozen green peas, thawed
1/2 cup sliced green onions
1/4 cup chopped fresh parsley
1/2 cup plain yogurt
1/2 cup mayo
2 tbsp chopped fresh dill
2 tbsp fresh lemon juice plus zest
1/4 tsp salt
1/4 tsp pepper
Combine first five ingredients in a bowl. Combine yogurt and next six ingredients in separate bowl. Add to veggie mixture, toss to coat. Cover and chill.
